Peanut Butter Granola Bars


Mmmmm who doesn’t love peanut butter?? I don’t think my life would be complete without it. I can seriously eat Jif out of the jar. I have much sympathy for those people with peanut allergies. May God bless your little souls.

Oh and when oats come into the whole mix, woah I’m one happy girl. I am not sure what it is about oats that make me so happy. Maybe it’s because they make me feel like I’m eating something healthier? Or maybe it’s the amazing texture it gives baked goods. I don’t know what it is but boy, they make one┬áheck of a┬áteam.

These granola bars can be a great way to finish off a meal as a treat or maybe some breakfast or a great snack to give you that little extra energy boost. Enjoy!

Peanut Butter Granola Bars

(Adapted from Howsweettreats.com)

2 c. oats

1/2 c. peanuts, chopped

1/4 c. + 2 T. peanut butter, melted

1/4 c. honey

mini chocolate chips, use your judgement on how much you would like (optional)

coconut (optional)

wheat germ (optional)

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine oats and peanuts. Add honey and mix to combine. Add melted peanut butter and mix until moistened. This works as a perfect, simple granola bar, but you can also throw in any add-ins at this time. Fold them into the dough. If the dough is still too dry, add more peanut butter or honey 1 tablespoon at a time until moistened.
  3. Press dough in an 8 x 8 square inch pan lined with foil. Bake for 25 minutes.

These would also work as a no-bake granola bar. If you would like to make them not baked, press the dough into the pan and regrigerate for 60 minutes.
