Chocolate Surprise Cookies

I feel like I’ve gone MIA. I’ve only missed like one day of blogging and I kinda feel like a slacker. This blogging stuff is really hard work, I’m not gonna lie. But it is addicting. Why? I don’t know. Who would’ve thought writing could be somthing I could enjoy so much? If you think about it, blogging is like writing a paper. Every day. But it’s fun stuff, you know? That’s what I love about it. Teachers don’t get to boss you around on here telling you what to write about; taking the fun out of writing. Anyways I’ll save my babbling about blogging for some late post, for now I’ll just drop you a yummalicious (sp?)  recipe. ;)

Who doesn’t love to find a little goody inside an already-awesome thing? I mean come on, if you think about it there are tons of things that have those little shockers that make us smile inside stuff like easter eggs, presents, peanut butter cups, and pretty much chocolate-covered-anything.

Cookies and Cream Cookies are quite a challenge. They’ve got a name that is destined for greatness. The challenge? Actually making the cookies taste cookies and cream-like. Well folks, I you like love chocolate. Cause there is about to be a chocolate exposion.

Cookies and Cream Cookies

(from cookiesandcups.blogspot.com ) (recipe halved, makes about 16-22 cookies)

1 stick butter

1/2 plus 2 T. white sugar

1 egg

3/4 t. vanilla

1/4 c. cocoa powder

1 plus 2 T. flour

1/8 t. Kosher salt

1/2 t. baking powder

1/2 c. mini semi-sweet chocolate chips

6 oz. Hershey’s Cookies and Creme Bars (I used those Santas up there, about 4 or 5 Santas and chopped em up pretty good)

  1. Preheat oven to 350 degrees F.
     
  2. Cream together butter and sugar until light and fluffy. Beat in eggs and vanilla. Slowly beat in cocoa powder until well incorporated. Mix in flour, baking powder, and salt. Then, fold in chopped Hershey’s Cookies and Creme Bars. Drop by large tablespoonful on a baking sheet.
  3. Bake apporoximately 12 minutes or until edges are set (if anything, underbake these)
  4. Let cool on baking sheet 2-3 minutes before transferring to wire rack to finish cooling process.
