Pound it!

Cake for breakfast? Who could possibly turn that down? I clearly remember having this pound cake when I was younger. I actually like it best cold from the fridge…I also like carrots dipped in ketchup, but that’s a whole other story. (hope I didn’t lose all my credibility in that single sentence! ;) )Anyways I miss my pound cake. It’s been too long!Thank goodness Paula Deen is here to save the day! Gosh, I love that lady. I would love to just spend a week with her. One, she’s hilarious. Two, she makes amazing food. Three, she doesn’t judge whatsoever.  A killer combo there, folks.Anyways, this is a super easy recipe you can just whip up and watch a few episodes of Modern Family while it’s baking up in the oven.This was made just about 24 hours ago and it’s almost gone…do you think that’s saying something?

Best Pound Cake

(adapted from Paula Deen)

3 sticks of butter (you didn’t expect anything less from Paula, did you?)

3 c. sugar

5 eggs

3 c. flour

1/2 t. salt

1/2 t. baking powder

1 c. milk

1 t. vanilla

  1. Preheat oven to 350 degrees F. Butter and flour a tube pan.
  2. Using a large bowl, cream butter. Add sugar, a little at a time. Add eggs, 1 at a time, beating after each addition. Stir dry ingredients together in a bowl and add to mixer alternately with milk starting with flour and ending with flour. Mix in vanilla.
  3. Pour into prepared tube pan and bake for 1 hour to 1 1/2 hours until a toothpick inserted in the center of the cake comes out clean.
  4. Let cake cool for 30 minutes, then use a knife to loosen cake from tube pan and flip onto cake dish. Keep lightly covered with plastic wrap.
