Healthy Baby Pumpkin Breads

Don’t you just love pumpkin?It’s really one of those things you can eat that just makes you smile. And how can you argue with something being ridiculously healthy, have pumpkin, and be tasty?Winning!Anyhow, this bread will truly warm the soul and give you that nice, Fall, cozy feeling inside. You all know what I’m talking about, right?!Well here you go, a pumpkin bread you can feel good about eating! 

Healthy Baby Pumpkin Breads

(When I made this recipe I halved it, that is why I used mini loaf pans, be sure to use a full size loaf pan if you are making the regular recipe, unless you want mini loafs!)

3/4 c. whole wheat flour

2/3 c. all purpose flour

1 t. baking soda

1 t. baking powder

1 t. ground cinnamon

1/2 t. ground nutmeg

1/4 t. ground ginger

1/4 t. ground allspice

1/4 t. ground cloves

1/4 t. salt

2 eggs

1 c. pumpkin puree

1/3 c. honey

1/3 c. extra virgin olive oil

1/4 c. brown sugar

1 cup walnuts, chopped (Optional-I left these out!)

  1. Preheat oven to 350o F.  Prepare an 8 x 4 baking pan by spraying with cooking spray.  I  lined my pans with parchment so I can remove the loafs easily after I take them out from the oven.  Laying the parchment over the cooking spray makes it stick to the sides.
  2. Mix all ingredients with your mixer.  Stir in chopped walnuts, if using.  Pour into prepared baking pan.
  3. Bake 40-45 minutes, or until toothpick inserted in middle comes out clean.
