Can we all just take a step back and admire at how healthy (…sorta) it’s been around here lately?!
Seriously, this is an accomplishment.
Well, here comes another healthy recipe. But it’s good! Just stick with me here
It’s definitely got a good start. Look! It uses up those icky bananas nobody really wants to eat!!
Wait, let’s talk about that for a second. Bananas are amazing because of those peels. Like you know what you are getting yourself into when you open that peel just by looking on the outside.
It’s really great, because you don’t really get that with many other fruits!
For example, apples. I mean I LOVE apples, especially when you get a nice honeycrisp, but back to their disadvantages… I can not even begin to tell you how many times I’ve bit into a granny smith apple and thought someone was pouring acid in my eyes. Those things can be dangerous!! You can never tell when they’re gonna be yummy. Unless I’m just uninformed on some magical technique…quite possible
Well enjoy the healthy party while it lasts…I wouldn’t count on it lasting long!
Whole Wheat Banana Oat Muffins
(Adapted from allrecipes)
1 c. whole wheat flour
1/2 c. all-purpose flour
1 cup rolled oats
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
3 mashed bananas
- Preheat oven to 400 degrees F. Line muffin tin with liners.
- Combine flour, oats, sugar, baking powder, soda, and salt.
- In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed bananas, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Divide the batter among the muffin cups.
- Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes, until toothpick comes out clean.
Random Fact of the Day: Hostess Twinkies were originally filled with banana filling. The filling was changed during World War II when the United States experienced a banana shortage.

And apparently I can’t recognize the quality of granny smith’s either. Sometimes Mr. N will come home from school and tell me that his apple was awful. Yet another reason to appreciate bananas – they’re honest!
