Monday I showed you guys the Spinach Lasagna Roll Ups I made! Super yummy little dinner that is perfect for a meatless Friday during the Lenten season. Speaking of the Lenten season, this year has REALLY gotten me going. I am so grateful that my family gives up treats for Lent because if they didn’t I never would have pushed myself to try all these non-baking, actual dinner-food recipes. I have truly learned a lot about cooking and myself so far.
Tuesday kind of marked the official start of the high school soccer season. I’m so excited for this season! Last year we had 9 seniors who are now gone and away at college. There was one player who decided not to try out this year, as well, so that meant there were 10 new spots. In case you’re not familiar with girl’s high school soccer, that is A LOT! We have lots of new faces on the team this year, and I’m really excited to get to know all the newbies and getting back into the swing of things with my old teammates.
Wednesday you guys got to see my Cheesy Chicken Tortilla bake. Ohmygawd. That thing was deeee-lish. It’s a super hearty meal that will fill ANYONE up! I swear. I could only eat one! These babies are pretty rich, so be prepared. They are so yummy, though. I loved the cheesy sauce!! We froze some of the leftovers and have one or two in the fridge, perfect for reheating the next day for lunch!
Thursday I got a new CHI straightener, which is quite an exciting event for me. Mine that I had before died quite suddenly. No warning. Just decided to be like ‘hey, today you’re hair is gonna look cahh-RAZY!’. Anyways, I got a new one and it is beautiful. Yes, my straightener is beautiful. It looks like THIS! (*sigh*)
Friday I shared with you guys the Spanish Rice that I had with my Cheesy Chicken Tortilla Bake. I have always loved spanish rice and always look forward to having it with my meal at mexican and spanish restaurants. I finally got to make it at home and it turned out to be much easier than I ever would have thought. Loved it!
Random Fact of the Day: There are vending machines in Japan made to give out the telephone numbers of random girls.
