Can you guys keep a secret?
I made these cookies the other day…and they’re kinda healthy. But SHHHHH my dad doesn’t know!!
He tried one that was fresh out of the oven, sitting it’s cute little self on the cooling rack. His immediate reaction: “Wow, these are GOOD!“.
I had to bite my tongue to keep myself from smiling, little did he know that the cookie he just ate was under 90 calories.
For some reason when my dad finds out that a dessert recipe is somewhat healthy it is automatically, in his mind, a disgusting pile of yuck. Soooo I’m counting on all of you to not spill the beans
Toasted Coconut Chocolate Chip Cookies
(Makes about 25 cookies)
1 cup flaked sweetened coconut
1/2 cup all-purpose flour
1/2 cup whole wheat flour (or all-purpose, if you don’t have whole wheat)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
pinch of salt
3/4 cup brown sugar
1/4 cup butter
1 1/2 teaspoons vanilla extract
1/3 cup chocolate chips
- Preheat oven to 350 degrees F.
- Arrange coconut in a single layer on a small baking dish. Bake at 350 degrees F for 6 minutes or until lightly toasted. Be sure to stir around half way through baking. Set aside to cool.
- Cream butter and brown sugar with mixer in a large bowl. Mix in egg and vanilla. Add in flours, baking soda, baking powder, and salt. Stir in, by hand, toasted coconut and chocolate chips.
- Drop cookies onto baking sheet by the teaspoonful and bake in preheated oven for 10-12 minutes or until edges are golden and set. Remove from baking sheet and let cool on wire rack. Enjoy!!!
