Fudge Brownie Explosion Ice Cream

For those of you who have not invested in an ice cream maker yet, well I highly recommend you do.

Honestly, one of the best appliances I have my parents have ever bought. Making your own ice cream is like the easiest thing ever!! I’m not one to mess with recipes with eggs in them for ice cream. I just like to stick to the basic cream, milk, and sugar base. Salmonella freaks me out in ice cream..however, I’m TOTALLY okay with it in cookie dough! ;) (Completely different story, let’s be real here)

Anyways, making ice cream at home lets you be the most creative person on the planet. You’re like Ben & Jerry for a couple hours! You get to make up your own funky flavors and just do whatever the heck you want. Like put gummy bears and skittles in your ice cream and no one will judge! One of my favorite ice cream concoctions that I have made was the Brownie Batter kind I showed you guys a bit back. Well, I tweaked it a bit and made it fudge brownie explosion ice cream! Sounds good, right? FYI: It tastes even better than it sounds :)

So here is your to do list:

  1. buy ice cream maker
  2. make ice cream
  3. eat it.
  4. :)

Fudge Brownie Explosion Ice Cream

1 cup heavy cream

1/2 cup milk (I use skim)

1/2 cup white sugar

1 teaspoon vanilla extract

pinch of salt

1/2 cup plus 2 Tablespoons Dry Brownie Mix

about 3/4 cup chopped up baked brownies

1/4 cup hot fudge topping**

  1. Mix the milk, cream, sugar, vanilla, dry brownie mix, vanilla extract, and salt together in a bowl using a whisk. Pour mixture into ice cream maker and freeze according to manufacturer’s directions.
  2. When there is 5 minutes left, pour in chopped brownies.
  3. When ice cream is done in ice cream maker, fold in hot fudge topping. Place ice cream in tupperware container and pop in the freezer. It will take a few hours for the ice cream to harden up, but I like mine soft so I was ready to eat mine about 2 hours later :) Enjoy!

* I actually made brownies a few weeks ago using a box mix. I only wanted to use half the batter, so I put the other half in a zip-loc bag and popped it in the freezer. I baked the brownies from the frozen batter in silicon muffin tins, that were sprayed with cooking spray, for about 20-25 minutes in a 350 degree F oven or until a toothpick inserted in the center came out mostly clean. I accidentally over baked mine a little bit, but it was no biggie since they went in the ice cream and you couldn’t tell at all.

** I used a hot fudge topping from a jar from the store, microwaved it for about 30-35 seconds until it was soft and smooth and a pourable consistency. I stirred it around with a knife in the jar to help it get to this point, then I let it cool for a minute or two so it wouldn’t heat up the ice cream too much and totally mess up the texture and consistency.

Cookies and Cream Fudge

There are certain candies that I used to be obsessed with when I was younger. 

One of them was those Hershey’s Cookies and Cream candy bars. I remember staring longingly at them at the grocery store when I was waiting in the checkout line with my mom.

There was something about that white chocolate and the crunch of the chocolate cookies that just provided the perfect contrast.

Then something happened. I got burn out. I could not stand them any more. The thought of white chocolate just made my stomach turn to gush. I could not bring myself to eat more Cookies and Cream Hersheys bars.

It took several years and I finally decided to take a big step by making this cookies and cream fudge. It’s safe to say that my anti-white chocolate phase is over. This fudge is so, so, so simple to make and is super delicious. The white chocolate is definitely not too over-powering where it becomes a dessert that is too rich to bear, instead the Oreos take the main stage and the white chocolate compliments the chocolate cookies. This is a perfect treat to make if you don’t feel like making a huge fuss but want a tasty dessert!

Cookies and Cream Fudge

  • She used all white chocolate chips in hers, I decided to use less chocolate chips (as she suggested) on the topping and omitted the extra Oreo topping as there was already plenty of Oreo flavor bursting throughout. Just a few minor omissions. Also, it is key to make sure you use a large heavy saucepan when melting the white chocolate, or else you will end up with an overflowing saucepan when mixing in the Oreos

2 1/4 cups white chocolate chips (other chocolate chips could work nicely too!)

+ 1/4 cup any flavor chocolate chips, reserved (I used semi-sweet)

1 can (14 oz) sweetened condensed milk

3 cups Oreo cookies, chopped (about 35 cookies)

1 tbsp vanilla extract

Directions:

  1. Combine 2 1/4 cups white chocolate chips and sweetened condensed milk and melt over low heat in a LARGE saucepan (you’ll be thankful for this when you add the Oreos) taking care to stir frequently and watch it so the mixture doesn’t burn.  When mixture is melted and smooth, add vanilla extract.
  2. Mix in the chopped Oreo cookies.  Pour mixture into 9 x 9 foil-lined or parchment-lined pan.  Then lightly press 1/4 cup white (or regular/dark) chocolate chips into the top layer.  The fudge will start to set up fairly fast, just press the chocolate chips in lightly. Place fudge in fridge for at least two hours to fully set up.
  3. Remove from fridge, slice, and serve.   Store extra in the freezer or fridge and it will likely keep for month(s). It most likely won’t stay in your house for more than a few days though ;)

What the heck is up with spam?! I don’t understand it one bit. Like what’s the point? Is somebody having fun doing this? Like are they just commenting all this random stuff on everybody’s blogs for kicks and giggles or what?

Some of them can be so mean, too! Like if you’re gonna send me a spam comment, at least be friendly!!

Anyways, here’s a super yummy bar recipe that you can munch on while pondering the concept of spam. If you haven’t noticed from the pictures about, it combines 3 of my favorite things! 1. Chocolate chip cookies 2. Oreos 3. Brownies. A winning team right there, folks!

Ultimate Chocolate Chip Cookie n’ Oreo Fudge Brownie Bars

(adapted from Kevin and Amanda)

1 cup (2 sticks) butter, softened
1 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 Tablespoon pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (12 oz.) chocolate chips, I used chunks
1 pkg Oreos (I used about 24 cookies)
1 Family Size (9×13) Brownie mix, prepared
1/4 cup hot fudge topping, optional

  1. Preheat oven to 350 degrees F. Grease a glass 9×13 baking dish or line a metal 9×13 baking dish and grease with cooking spray or oil.
  2. Cream the butter and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. Add the eggs and vanilla and mix well to thoroughly combine.
  3. Add in the flour, baking soda and salt, then slowly incorporate into the mixer until just combined. Stir in chocolate chips.
  4. Spread the cookie dough in the bottom of prepared baking dish. Top with a layer of Oreos. Pour prepared brownie mix (with hot fudge topping mixed in, if using) on top of Oreo and cookie layer.
  5.  Bake at 350 degrees F for 45-55 minutes. Cool on wire rack.

Almond Joy Ice Cream

Ah so I finished my first week of school. It was rough saying bye to summer. I’m pretty sure I’ll miss him more than he will miss me :`(
I would also like to address the fact that this was the first time in three years that I did not get an allergic reaction on the first day of school. Let me also make it clear that this is not just a minor allergic reaction. It’s ugly. Like plastic surgery done by a caveman.

Sometimes I even get the top and bottom lip. Or just in one weird little spot like him.

My cheeks usually get pretty swollen too. Which is really quite unfortunate considering I already have chipmunk cheeks.. But I would have to say the worst thing is that the doctors can’t figure out what I’m allergic to!! They think it could just be stress. Which would make sense with the whole first day of school thing…but I’ve also gotten it on extremely non-stressful days. Grr.

On the bright side, I haven’t gotten one in a long time!!! Woohoo (knock on wood). Just watch now, I’m going to get one tomorrow.

Moving on!

I made ice cream :) . And it was really tasty. Sorry for those of you who don’t have an ice cream maker. I know, it’s a sad life. I’ve been there. Till I caved. Wait, no that was my mom. But seriously, get an ice cream maker so we can bond and gossip about ice cream. Who doesn’t love ice cream anyways? You get to make it our own way for crying out loud!! Okay, commercial is now over..sorry.

Back to the ice cream, I decided to make an almond joy ice cream because Almond Joys are one of my parent’s favorite candy’s and I’m just that kind of a daughter…hehe.

But really, it is super tasty with toasted coconut and delicious hot fudge swirled in. Super easy, and scrumptious!!

Almond Joy Ice Cream

3/4 c. milk

1/2 c. plus 1 T. white sugar

1 1/2 c. heavy cream

2 1/2 t. vanilla

1/2 c. sweetened coconut (shredded or flaked)

a little more than 1/4 c. hot fudge

8 mini Almond Joys, chopped**

  1. Whisk milk and sugar together until sugar is dissolved. Mix in vanilla and heavy cream. Pour into ice cream maker and follow manufacturer’s directions.
  2. Meanwhile, toast coconut on stove over medium heat for about 5-7 minutes, constantly stirring to avoid burning. Heat hot fudge to soften.
  3. During last couple minutes, add coconut to ice cream and chopped Almond Joys. When done with ice cream maker, fold in hold fudge. (FYI: mine never gets “swirly”…any tips?) Freeze in freezer for about 4 hours, until solidified.
  4. Enjoy! :-)

** I did not have any Almond Joys in the house…go figure. It was still very tasty without them, but I do think it would definitely add something if they were involved!!
