Promming! (PART TWO)

Once I got home I looked down the street and saw one of the girls in my prom group already taking pictures with her date. I was still in running shorts and a zip-up… so I kind of flipped out and ran all around the house getting ready. I threw on my dress, threw some make-up on my face and called it a pretty. I think my mom photographed every second on me getting ready. I’m honestly a little shocked she didn’t catch one of me in my underwear. *phew!*

We then proceeded to take more pictures than anybody ever would have thought possible. We were a little unfamiliar with the lens on our Nikon, so a bunch of our pictures turned out fuzzy, but we still ended up getting some good ones. We took pictures of just me at the house, pictures with my date at my house, pictures at this garden place with my whole group. It was one big picture frenzy. My mouth and cheeks got the workout of a lifetime.

After pictures we headed over to the dance. FINALLY! It was awesome!! It’s funny how similar prom is to a wedding. They served up salad, chicken, veggies, potatoes, and a choice of chocolate cake or cheesecake. I got the chocolate cake. If you know me at all, you know that’s like a total no-brainer question. And then we finally got to go on the dance floor and shake our bootys. It was an awesome time…my legs were actually sore the next day! (embarrassing) After the dance, we headed over to the post prom party at the park district, where they had tons of rooms with games and prizes and food and pictures. Sooo much stuff to do there. My date and I got a caricature drawing that turned out awesome. I look pretty great, if I say so myself. Hopefully he’ll give me a copy soon, I seriously wanna frame the thing!

Confused as always

They had loads of prizes they were giving out every half hour like $50, $100, $250, $1000, iPads, beats by Dre headphones, gift certificates, you name it. I didn’t win anything but a few of my friends won money and gift certificates. The whole post prom party ended at 3 A.M. I was ex-hausted! I got home, took a shower to get all the yucky hairspray out of my hair, then passed out on my bed. I knew I had to get all the sleep I could because…

Me and a few friends headed over to Six Flags Great America for the day. We left around 9 A.M. and took the hour drive to get there. We got in the park, got in line for our first roller coaster, were soooo close to the front of the line, then an announcement comes on. “We’re sorry, but due to severe weather conditions, we’re going to have to close down this ride”. So we’re like, okay this sucks but at least we can go on some other rides. All of a sudden lightning comes from like every direction. I have never seen so much lightning, so close, in my entire life. The ground was literally shaking and it felt like the earth was going to crack. Needless to say, we took off in a dead sprint to the car. It was a total bummer that we just drove all that way to not even get to go on one roller coaster, but luckily we had a plan B. We headed over to one of my favorite places in the world, Lake Geneva (where my friend/date has a lake house) and ate lunch there at this incredible little place called Popeyes, not to be confused with the fast food restaurant, Popeyes.

After lunch, we decided to head back home and watch a movie at my house. We picked “Drive”, it’s got something for everyone. Blood and action for boys, Ryan Gosling for girls. #winning. Overall it was an awesome weekend that I would never trade for anything in the entire world. Maybe some mint chocolate chip ice cream….but probably not.

Banana Boatmeal

Boatmeal.

Yes, it IS a word. It’s been approved by Katie. Boatmeal=Baked Oatmeal, for those of you who not familiar with the lingo. Anyways, when I was in Lake Geneva last summer, I tried baked oatmeal for the first time ever and was immediately in love.

It is such a simple food, but it is so, so good. It’s similar to an oatmeal muffin…but different. It’s kind of like a granola bar-muffin-bread mixed into boatmeal.

I decided to make the banana version with a few alterations. It was deeee-lish and tasted just like banana bread and oatmeal, go figure! Boatmeal has a slight chewy texture, and if you opt for the extra 5 minutes of broiling (which I HIGHLY recommend), you’ll end up with a nice, toasty little crust on top that really pulls the whole thing altogether. What are you waiting for? Hop on the boatmeal train! (or boat?)

Banana Boatmeal

(adapted from Chocolate Covered Katie)

1/2 cup oats

pinch of salt

about 1/4 of a very ripe banana, mashed

3 1/2 Tablespoons of water or milk

1/2 Tablespoon vegetable oil

2 packets of Splenda or 2 Tablespoons of white sugar

1/4 teaspoon vanilla extract

1/4 teaspoon cinnamon

  1. Preheat oven to 380 degrees F. I did not grease my baking dish before putting the ingredients in, but I was able to get my boatmeal out just fine, if you are unsure if your baking dish will let the boatmeal out easily, I recommend spraying with cooking oil.
  2. Combine oats and salt. Mix in the rest of the ingredients. Pour into a small loaf pan, or 1-cup ramekin, or I used a mini pie tin. Bake for 15-20 minutes, or until it’s set. Set your oven to HI broil for 5 minutes, or until crust is golden-brownish or to desired doneness. Enjoy!

I’m Back!!!

Hey Guys!! Man, it’s nice to be back! For the past week I was actually in Lake Geneva, Wisconsin for a bible camp called Covenant Harbor. They have this high school camp called Element that is really just amazing. Every time I go to that place I feel like my life truly changes. What makes it truly incredible is that while making you closer to God, they make it insanely fun. Here is a breakdown of the week.

Sunday: Arrived at camp and settled in, we had a cook out that night and I tried my first-ever turkey burger and LOVED it!!

Monday: Early morning wake-boarding-had to be on the pier no later than 6:30 AM, went to downtown Lake Geneva (tried my first ever Espresso Cooler from Caribou Coffee-and LOVED IT),  and got a private little concert from the Christian band- The Least of These (Check them out, they’re pretty good!)

Tuesday: Went on the high ropes coarse and did this “Leap of Faith” thing where you climb up a pole thing that looks like and is about the same size as a telephone pole, then you jump off and try to grab onto this bar that is hanging out there (you’re connected to a wire this whole time, I SWEAR it’s completely safe!!), then we made our own campfire to cook our own hot dogs and s’mores

Wednesday: I went canoeing-quite the workout! We went ALL THE WAY across the lake!, and also that day I had this very disgusting breakfast that I’m not quite sure what it was, I think someone might’ve said it was ground wheat? Not quite sure…,  we also went banana boating-which if you’re not sure what that is, watch this video. It’s pretty much where a tube that looks like a banana is being pulled by a boat while you’re all sitting on it. Really fun, but can be pretty painful! Later this night I felt like I really, really connected with God, a truly unique experience.

Thursday: We took a bunch of boats over to another beach across the lake, we dragged with us (attached to the boats), a water trampoline, a floating volleyball net, and a banana boat. That may have been the most fun thing ALL WEEK. For some unknown reason they serve lots of food on sticks. We had corn dogs (sorry, NOT a fan…), breakfast corndogs-which is a blueberry pancakes wrapped around a sausage on a stick (once again, not a fan) and lastly asian chicken on a stick (not too bad). We ended the night with a mattress race which was super fun. Its kind of like a scavenger hunt, but everybody in your cabin must have a hand on the mattress you guys are carrying throughout the camp-it looks absolutely ridiculous!

Friday: We got to sleep in! (till like 9), then we did lots of packing, swimming and more games. We got to end the week/night by going to a roller rink, which was SUPER fun!

Saturday: packed and left, a really sad day :(

So there you go! That was my whole week!!
