Cookie Butter Cookies

I had a near death experience about a week ago. Maybe I’m exaggerating. But let’s face it, I like never exagerrate! My life is totally like Spider Man’s, where every day brings new challenges, deathly risks, and flying. Alright, maybe not the flying part. I don’t think Super Man can fly anyways…

But back to my near death experience. It was a lovely Sunday morning and I had just made a pizza dough (for the cinnamon pull apart bread) and I decided to let it rise for the necessary 2 hours in the turned off oven, covered with a towel. I set the timer for 2 hours and was feeling like I was on top of everything. So prepared, setting a timer and all. I then proceeded to make the biscuits that I posted last week. My mom happens to love biscuits, so I thought I’d make her happy by making some for her. I then preheated my oven to 425 degrees F. Still feeling awesome because I had preheated where it was timed perfectly for when I needed to put my biscuits in the oven. Something started to smell a little funny in the house. This was not a haha funny. This was a HOLY SMOKES I’M GONNA DIE funny (of course, the word funny didn’t come to my mind at the moment, though).

I kind of ignored it at first hoping my nose was just going crazy. Then as I was about to put the biscuits in the oven, I realized I had forgot that I had put the pizza dough in the oven to rise. With a towel on top.

I immediately freaked out threw my hand in the oven, realized it was FREAKING HOT, grabbed an oven mitt, and threw the pizza dough and towel out of the oven. This was all happening with my fake baby crying and fire alarms going off. Thank God my parents were not home! The towel was green to begin with, but came out an orange-ish brown color. The pizza dough became kind of like a bread. Funny enough, I actually tried the pizza dough and it was delicious! It tasted like it would be perfect for rolls. Hmm…maybe a good idea for the future. So as it turned out, my near-death experience turned into something kind of amusing and I figured out a new idea for the future with the pizza dough.

Now that you have heard my near death story, I’d say it is time for cookies. Better yet…cookies made with cookie butter! These babies are yummo to the max! If you love delicious things then I recommend that you make these. I don’t know why anybody wouldn’t like delicious things, therefore, I see these cookies in your future!! ;)

Cookie Butter Cookies

(makes about 3 dozen)

1/2 cup (1 stick) butter

1/2 cup cookie butter like Trader Joe’s Speculoos or Biscoff or you can make your own homemade version!

1 cup brown sugar

1/2 cup white sugar

2 eggs

2 teaspoons vanilla

1/4 teaspoon salt

1/2 teaspoon baking soda

1 cup all-purpose flour

1 cup whole wheat flour (all-purpose will work too)

milk, as needed

1/2 cup chopped dark chocolate pretzels

1/2 cup chocolate chips

  1. Preheat oven to 325 degrees F.
  2. Melt butter and cookie butter in a microwave-safe bowl in microwave in 30 second increments. When fully melted, mix butter and cookie butter until fully combined. Set aside and let cool.
  3. Place cooled cookie butter mixture in large mixer bowl and cream with sugars. Mix in vanilla extract and eggs. Add in flours, salt, and baking soda. If dough is crumbly, add milk until dough achieves desired consistency.
  4. Mix in chopped chocolate covered pretzels and chocolate chips.
  5. Scoop dough onto cookies sheets. Bake in preheated oven for 9-11 minutes or until set and slightly underdone. Let cool on cookie sheet for 2 minutes then transfer to wire rack. Store in an air tight container. Enjoy!

Cinnamon Pull Apart Bubble Bread-SRC Post

Hey there! How ya doing on this fine Monday? You look like you could use some sugar. Maybe some cinnamon? Oh yes, yes you definitely need it. Even if you don’t think you do, trust me you definitely do.

Here we are at another lovely month of the Secret Recipe Club (SRC) and I am so excited to tell you about the blog I was assigned. I feel SO, SO, SO fortunate to have found Carrie at Bakeaholic Mama. Her blog is ah-mazing, for lack of a better word. Oh my gosh, seriously. EVERY single one of her recipes look awesome. I kinda sorta want her to hang out with me. But…she lives in New Hampshire, and I don’t want to totally creep her out. Anyways, I feel like I’m totally like her. I love all the flavors she puts into her foods. Aaand we share the common love for bologna. Why doesn’t everybody love that stuff? Sure it feels weird, but it’s so yummy! It’s kind of funny I got Carrie’s blog because I had just saved a bunch of her recipes on foodgawker like a week before I was assigned to her. Talk about perfect timing!

I ended up choosing to make her Cinnamon Pull Apart Bubble Bread. It’s sort of like Monkey Bread, but in loaf form. Also, the dough balls are filled with cinnamon chips to give you that extra cinnamon kick! This is a delicious bread that is perfect for breakfast anyway, but is sweet enough to enjoy as a treat any time of the day.

Cinnamon Pull Apart Bubble Bread

FOR THE BREAD:

1 batch of pizza dough (for the pizza dough, I used This Recipe, it’s perfect because it is no-rise and you can just use your food processor!)

1/2 cup cinnamon chips

1/4 cup melted butter

1/2 cup white sugar

1 Tablespoon cinnamon

FOR THE GLAZE: (I made half of this recipe for my glaze, less is more to me on the icing for breads)

4 oz. cream cheese

1 cup powdered sugar

2 Tablespoons of cream or milk (I used skim milk)

1/2 Tablespoon vanilla extract

1/2 Tablespoon cinnamon

  1. Preheat oven to 375 degrees F. Grease a loaf pan using cooking spray and set aside.
  2. Mix white sugar with Tablespoon of cinnamon. Divide dough into 2 inch pieces, stretch out into a 2-inch circle, fill with a few cinnamon chips. Press edges together to seal in cinnamon chips and roll into a ball. Roll each ball into melted butter, then into cinnamon sugar. Place each ball into prepared loaf pan. Take leftover butter and cinnamon-sugar mixture, combine together and pour over dough balls.
  3. Bake loaf in preheated oven for about 30 minutes, or until top of bread is starting to harden and the sides of the pan have a bubbly caramel. Let cool for about 10 minutes. Then flip onto serving dish.
  4. FOR ICING: beat cream cheese, vanilla, and powdered sugar in the bowl of an electric mixer. Slowly add in milk or cream. Mix in cinnamon. Add more milk as needed to make icing right consistency for drizzling. Pour icing over warm bread and enjoy!

Whole Wheat BBQ Chicken Pizza

While I love good ‘ol Chicago Style Deep Dish pizza to death, I’ve gotta mix things up every once in a while. There is this awesome little pizza place by us that my family has gone to a lot for their BBQ chicken pizza since I was real little, but they’re prices are completely jacked!!! I mean it is ridiculous. They have some of the most delicious tasting BBQ chicken pizza I’ve ever tasted. It’s sooo good. Beyond words. One thing I could do without is their pool of grease on top that you get sometimes. I always have to wipe mine with napkins (notice plural? napkins). Yuck. But then it’s tasty. Also since it’s so expensive it’s kinda a treat for us and we don’t get it super often. Thus, I decided to finally make my own with my lovely mama. We decided to kick up the nutrition factor and I made the whole wheat crust. She helped assemble and prepare the toppings and put it all together. This pizza definitely rivals the one from the place we’ve been buying from for years. Between the absence of grease puddles and the slightly sweet but tasty crust,  we’ve got ourselves a winner.Oh and I almost forgot to mention our little trooper over here!Harry had to get surgery to get a yucky mole removed. He has to have that cone thing on for 2 whole weeks!!! I feel horrible when he tries to give us kisses and the cone just kinda prevents him…but it’s a wee bit funny. But mostly sad yet adorable! (Does anyone else think his stitches look a wee bit like Harry Potter??)Anyways back to pizza!! You must make this recipe because for one it’s super easy. You don’t even have to make the crust, you can buy one!! I won’t be offended :) Plus it’s super tasty!!! And surprisingly filling. But I’ll let you be the judge of that! Eat up

Whole Wheat BBQ Chicken Pizza

1/2 Red onion, sliced

about 1/4 c. Parmesan cheese

about 2 c. Mozzarella cheese

1 lb. Chicken, diced and cooked

about 1/2 c. (enough to coat bottom of crust) BBQ sauce

  1. Preheat oven to 400 degrees F.
  2. Roll out pizza crust and place in pan. Spread barbecue sauce on top evenly. Sprinkle half the Parmesan cheese. Top with onion, followed by chicken, then mozzarella and Parmesan.
  3. Bake in preheated oven for 20-25 minutes

FOR CRUST:

(adapted from How Sweet It Is)

1 packet active dry yeast

3/4 c. warm water

2 c. Whole Wheat flour

2 T. Honey

2 T. Olive Oil + more to rub on bowl

1/2 t. salt

  1. Mix yeast and warm water and let sit until foamy.
  2. In a separate bowl, mix flour and salt together.
  3. Once yeast is foamy, add in olive oil and honey and stir. Mix into flour and kneed to create a dough. You may need to add a bit more flour if dough is too sticky.
  4. Place in an olive oil-rubbed bowl and cover. Let rise for 2-3 hours.

The Quickest Pizza You’ve Ever Made

Pizza… Quick? What! Yes, it is true. You can have pizza within 15 minutes. and you don’t even have to roll out dough. No sticky dough sticking to the counter. No pouring flour all over the place. Pure bliss. :)

Just a simple little tortilla

I really, REALLY wanted to make BBQ Chicken Pizza but unfortunately I didn’t have any chicken defrosted and I was not  about to wait hours for the chicken to defrost.

So I just went some good ‘ol classic cheese pizza. But then of course as a last minute decision, I decided it was truly a requirement  to have some bacon on there SOMEWHERE! So I made the decision to go half and half. 

Some people may find it odd that I put cheese under and on top of the sauce, but I really think that it does add some depth and really enhances the flavor.

What a great decision. Sometimes I wonder where these sparks come from, and why I can’t get them during my chemistry tests. 

Quick DELICIOUS Pizza

(for one!)

1 tortilla

3 T. grated Parmesan

about* 1/4 to 1/3 c. pasta sauce (pizza sauce and tomato sauce are basically the same)

about* 1/2 to 3/4 c. mozzarella cheese

1 t. parsley

1 t. oregano

3 T. Bacon, optional

  1.  Preheat oven to 350 degrees F.
  2. Place tortilla on baking sheet. Sprinkle Parmesan evenly on tortilla. Spread sauce evenly on top of cheese. After that, sprinkle the mozzarella on top of the sauce. (Don’t be shy! When you think it’s a lot, it WON’T look like that after it’s baked) Then, sprinkle your extra toppings-parsley, oregano, bacon, chicken, sausage, etc.
  3. Bake in preheated oven for about 10 minutes or until cheese starts to bubble and crust may become golden on edges.

* NOTICE: the “about”‘s are really just where you should use your own judgement and decide what looks good to you, I’m sure you already know that. I, personally, always am a stickler on following recipes, probably why I do baking rather than cooking so much!
