High-waisted shorts just seriously do not work on me. I think you maybe have to have like super skinny, 6-feet long, Taylor Swift legs to pull those babies off.

And the mullet dresses? I don’t know…I haven’t even tried one on, but I think I would feel like I was missing part of my dress.

And what is going on with those heels that don’t have heels. They’re like Lady Gaga-style shoes, where it’s basically a platform and then no heel. Here’s a link because my description sucks. I really don’t even understand how it’s possible to walk in those.

I think one of the few trends I have been digging is the maxi dress. That’s one I can get behind. Modest, cute, and comfy! They really seem like more of a classic style that I can see sticking around for a while.

Just like good ‘ol chocolate chippy chunk cookies, loaded with chocolate and full of childhood memories with mom’s fresh baked chocolate chip cookies. That’s what the babies bring you, fresh out of the oven, they are absolute heaven.

Chocolate Chippy Chunk Cookies

1 cup (2 sticks) butter, softened

1 cup white sugar

1 cup brown sugar

2 teaspoons vanilla extract

3 eggs

2 cups all-purpose flour

1 cup whole wheat flour

pinch of salt

2 teaspoons baking soda

1 1/2 cups chocolate chips

1/2 cup chocolate chunks (I chopped up a chocolate bar)

  1. Preheat oven to 350˚F 
  2. Cream together butter and sugars. Mix in vanilla extract and eggs. Sift flours, salt, and baking soda. Add to creamed ingredients. Mix until fully incorporated, and add in chocolate chips and chunks.
  3. Drop dough by the Tablespoonful onto an ungreased cookie sheet and bake in preheated oven for 12-15 minutes or until golden on edges. Let cool for 2 minutes on cookie sheet, then transfer to wire rack. Enjoy!

Double Chocolate Oat Cookies

I know weather talk is so extremely typical but I just need to have a quick chat about Mr. Sun.

Literally, like..what the heck weather?? All spring we had crazy miserable weather here in Chicago. I had soccer games one day in a blizzard, the next day is pouring rain.

Now it’s “summer” and I’m wearing a sweatshirt, yoga pants, AND a jacket. This is annoying on many levels. My job is at the local pool and I don’t think I’ve worked a full shift yet in the 2 weeks it has been open just because it has been too cold and we’ve had to close early or send people home because the pool was losing money by keeping so much staff there.

So I decided to warm up the house by baking up some delicious double chocolate oat cookies. These are my favorite chocolate cookies I have ever made, and one of my favorite cookie recipes that I have ever made.

These are super chewy, unlike the typical chocolate cookie [that I make] that are rock hard because you can’t tell if they are baked all the way when you take them out of the oven. These are perfect, and a “MUST-bake”!!!

Double Chocolate Oat Cookies

1 cup all-purpose flour
1/4 cup whole wheat flour
1/2 cup cocoa powder (I used dark)
1 teaspoon baking soda
pinch of salt
1 cup (2 sticks) butter
1 cup brown sugar
1/2 cup white sugar
2 teaspoons vanilla extract
2 eggs
1 cup chocolate chips
1 3/4 cups quick or old-fashioned oats

  1. Preheat oven to 375° F.
  2. Whisk flour, cocoa, baking soda and salt in medium bowl. Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl until creamy. Beat in eggs. Gradually beat in flour mixture. Stir in chocolate chips and oats. Drop dough by rounded tablespoon onto ungreased baking sheets.
  3. Bake for 9 to 12 minutes or until edges are set but centers are still soft. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

We’ve been having senior-ey stuff going on at school all week and today we have our practice for graduation. I’m excited to graduate..but there is something I really am not looking forward to.

Those graduation caps. SERIOUSLY. Who started the graduation cap tradition??! Whoever it was certainly needed to consult a fashion expert or something because I certainly am not a fan of those things. I feel like they give people a fabric widows-peak. Just very unflattering.

Fresh Apple Breakfast Cake

3 cups apples (about 2 medium-large sized ones), peeled and diced

2 teaspoons ground cinnamon

2 teaspoons vanilla extract

1 cup chopped walnuts

2 cups all-purpose flour

1 cup whole wheat flour (or all-purpose)

1 teaspoon baking soda

pinch of salt

2 cups white sugar

1 1/4 cups vegetable or canola oil

3 eggs

  1. Preheat oven to 325˚F and spray a large tube pan or bundt pan with cooking spray
  2. In a medium bowl, combine peeled and diced apples with cinnamon, vanilla extract, and walnuts. Set aside.
  3. In a separate medium bowl, sift together flour, baking soda, and salt. Set aside.
  4. In a large bowl, cream together white sugar, oil, and eggs. Mix in dry ingredients. Fold in apple mixture using a rubber spatula. Spread thick batter into the prepared pan.
  5. Bake in preheated oven for 90 minutes, or until toothpick inserted into the center comes out clean. Let cool in pan for about 1 hour, then turn onto plate and enjoy!

I’m a huge fan. I particularly love macadamia nuts, which are sort of a special treat for me because they are super duper expen$ive here in the non-tropical Midwest. I decided to treat myself and bake up some cookies made with a match made in heaven-coconut and macadamia nuts.

All I have to say is, you MUST try this recipe. These cookies are everything you need and more.

Coconut Macadamia Nut Cookies (Hawaiian Dream Cookies)

1/2 cup (1 stick) butter

1/2 cup white  sugar

1/2 cup brown sugar

2 teaspoons vanilla extract

1 egg

pinch of salt

1/2 teaspoon baking soda

3/4 cup whole wheat flour

1/2 cup all purpose flour

1 1/2 cups coconut

3/4 cup chopped macadamia nuts

  1. Preheat oven to 350˚F.
  2. Cream together butter and sugars using a mixer. Mix in egg and vanilla extract. Add in salt, baking soda, and flours. Stir in coconut with mixer. Fold in nuts by hand or slowly using the mixer
  3. Drop dough onto an ungreased baking sheet by the teaspoonful and bake in preheated oven for 7-9 minutes or until edges are golden. Let sit on baking sheet for 2 minutes, then let finish cooling on wire rack for about 5 minutes. Enjoy! Store leftovers in sealed container.

Monster Cookies

I have been thinking.. I really, really want to get a scooter. Ever since my mom and I rented them in Key West, I have been considering it even more. I should probably start growing my money tree first, but like in all seriousness, I think they are a smart investment especially for when I get out of college. So fuel efficient and hellooooo parking is like a bajillion times easier.

Anyways while I’m waiting for that dream to come true, I have some monster cookies to share with you all! There are loads of variations of the famous “monster cookie” floating around everywhere, but this one is the version I came up with that is loaded with a bunch of stuff.

I wanted to put crushed pretzels and peanut butter chips in there too, but I didn’t want to overload the cookie with add-ins. Feel free to mix up the add-ins what whatever you have in the house! This recipe is great for using up post-holiday candy that is laying around that you can cut into small pieces and throw in the dough.

Monster Cookies

(Makes about 2 dozen large cookies)

1/2 cup (1 stick)

1/2 cup brown sugar

1/4 cup white sugar

3/4 cup peanut butter

1 egg

2 teaspoons vanilla extract

pinch of salt

1/2 teaspoon baking soda

1/2 cup whole wheat flour

3/4 cup all-purpose flour

1/2 cup oats

1/2 cup chocolate chips

1/4 cup butterscotch chips

1/3 cup M&Ms

  1. Preheat oven to 350˚ F.
  2. Using a stand mixer, cream together butter and sugars. Mix in peanut butter. Add in egg and vanilla extract. Stir in baking soda, flours, and oats. Finally, mix in chocolate chips, butterscotch chips and M&Ms until thoroughly combined.
  3. Drop dough by Tablespoonful onto an ungreased cookie sheet, flatten cookies slightly (they don’t spread in the oven), and bake in preheated oven for 8-10 minutes or until edges are set and golden. Let cool on cookie sheet for about 2 minutes then transfer onto wire rack to finish cooling. Enjoy!
