The other day I had a slight dilemma. I was in the mood for some soup. French onion soup to be exact.
We had one onion. ONE ONION. But I was determined.
I also needed to use white wine. We had no white wine open in the house. All closed. I had to open it myself. I was scared.
However, my desire for some soup won out on this one. And I pulled through.
I present to you, French Onion Soup for 2 hungry people or ONE very hungry Casey or 3 normal people. That’s all for today folks.
French Onion Soup
(serves 2-3 people)
1 1/2 Tablespoons Butter
heaping 1/2 Tablespoon olive oil
1 large onion, thinly sliced
3/4 teaspoon salt
1/3 teaspoon sugar
1 1/2 Tablespoons all-purpose flour
21 1/3 oz. beef broth
1/2 cup white wine
- In a small dutch oven or pot, melt together butter and olive oil. Add onion, salt, and sugar. Cook over medium heat for about 8 minutes, or until lightly browned, stirring frequently.
- Sprinkle flour over the mixture, stirring until well blended. Gradually stir in beef broth and white wine. Bring to a boil and cook and stir for a little less than a minute. Reduce heat, cover and simmer for about 10 additional minutes, stirring occasionally.
OPTIONAL:
If you want to get fancy, place a slice of french bread on a baking sheet and broil for about 3 minutes on each side, ladle soup into oven proof bowls, top each bowl with a piece of toasted bread, sprinkle with a little bit of parmesan, swiss, cheddar, and mozzarella, and broil for about 2 more minutes until cheese is lightly golden. I did this and you NEEEEED to do it too!! Literally felt like my insides turned into a warm and fuzzy teddy bear’s insides.
Random Fact of the Day: Your saliva keeps the acid balance right in your mouth; otherwise it would be so acidic that your teeth would be dissolved by it.
